     Vegan Pumpkin Pudding

Ingredients
1 Lb silken Tofu
2/3 Cup Maple Syrup
3/4 Tsp Pumpkin Pie Spice
1/2 Tsp Salt
1 Cup Canned pumpkin, unsweetened
1/2 Cup extra virgin coconut oil, melted slowly(optional)
topping vanilla bean coconut milk whip(optional)
 

Instructions
add ingredients to a blender. Blend on low-high until smooth and creamy. The mix will be watery at this point but placing it back in th fridge or freezer will firm it up a bit. If you are adding coconut oil, melt in microwave. Then very slowly pour into the puddng mix whilke blending on low. You dont want it to cool too quickly and turn into little beads. For a quick chill, pour pudding into tiny serving cups and place in freezer for 15min, then moe to fridge until ready to serve.
