     Italian Roasted Snap Peas

Ingredients
1 Large Leek, white part only, halved lengthwise, thoroughly washed
1 lb Sugar Snap Peas, trimmed
2 tsp Extra Virgin Olive Oil
1 Cup Cherry Tomatoes, halved
1 Tsp dried Oregano
 

Instructions
Preheatoven to 425degrees. Cut leek into 2in lengths and then very thinly slice each piece lengthwise, yielding 2in long strips. Toss the leek strips, peas, oil, and salt in a med bowl. Spread evenly on baking sheet. roast for 15min. Stir in tomatoes. return to oven and roast until veggies. Begin to brown, about 10 min more toss with oregano and serve.
