Heat non-stick griddle to medium heat while prepping pancake batter. Butter skillet then add 1/4 cup of oil. Ladle 1/4 cup of batter for each pancake. The bottoms of pancakes should brown in 2-4 minutes. Flip to finish cooking other side, then reserve pancakes in preheated 200 degree oven until ready to serve.
Preheat a large non-stick skillet over medium heat for 1 minute. Crack eggs into large bowl and whisk well. Season with salt and pepper. Add butter to the skillet and allow the butter to melt. Add the eggs and reduce heat to medium-low; then add sausage. Stir frequently until small curds form; the more you stir the creamier the eggs will be. Remove from heat once fully cooked.
Place a slice of each on top of a pancake, top with scrambled eggs. Top scrambled eggs with another slice of cheese and place another pancake on top. Add a slab of butter and smother with maple syrup.
