     Persimmon Pudding

Ingredients
1 cup persimmon pulp
2/3 cup sugar
1/2 cup milk
1/2 teaspoon salt
1 teaspoon vanilla
1 Tablespoon butter, melted
2 teaspoons baking soda
1 cup flour
1/2 cup chopped walnuts
 
1/2 teaspoon cinnamon
1 beaten egg
For hard sauce-
1/3 to 1/2 cup soft butter
1 cup powdered sugar
brandy to taste (start with 1 teaspoon) or use
1/2 teaspoon vanilla or lemon extract
For flaming- Heated brandy (maybe 1/4 to 1/2 cup)

Instructions
Combine all ingredients and bake in a covered casserole (which sits in a pan of water) for 1 hour at 375 degrees. Remove the top (so it can dry off) and bake 10 minutes longer.
Combine the ingredients for the hard sauce, pile into an attractive serving bowl, and chill in the refrigerator. Pass the hard sauce around the table so that guests can put some on their plate to enjoy with the persimmon pudding.
When time to serve, wrap the persimmon pudding in foil and warm in the oven. Then heat the brandy for flaming (until steaming) in the microwave or in a small pan on the stove. If you want this to look fancy, pour the hot brandy into an attractive pitcher, dim the lights, place the persimmon pudding on a rimmed platter and put it on the table in view of everyone, ignite the brandy in the pitcher, and enjoy the ooohs and aaahs as the fiery stream of blue flame goes from the pitcher (lift it high above the pudding) to the platter. Then use a large spoon to ladle the still-flaming brandy from the platter over the persimmon pudding again until the flames die down.
