     Rachel's Favorite Pumpkin Pie

Servings   makes 2 pies

Ingredients
4 large eggs
1 1/2 c sugar
1 t salt
2 t ground cinnamon
1 t ground nutmeg
1/2 t ground cloves
1 t ground ginger
one 29 oz can pumpkin puree
two 12 oz cans evaporated milk
 
2 unbaked 9 inch pie shells (4 c volume)

Instructions
Oven to 425. Beat eggs in large mixing bowl and quickly whisk in the sugar. Add salt, cinnamon, nutmeg, cloves and ginger and mix to combine. Add pumpkni and evaporated milk and whisk until smooth. Pour half of the filling into each pie shell. Bake for 15 minutes at 425 degrees. Lowwer the heat to 350 degrees and bake for an additional 40-50 minutes or until toothpick comes out clean. Cool and serve with whipped cream.
