Dice celery onion and put in dutch oven pot just cover with water and just cover with water for about ten minutes. Then add diced potatoes and simmer until tender. At this point you could also add veggies of your choice. I mash some of the potatoes but not all. Add soup/milk chili powder and stir well. Then start adding cheese stirring to melt I find it usually takes at least 3 quarters of large block of velvetta. Be careful not to have too high, schorches easily. Add hot sauce if you like. Do not let boil once cheese melts it is done.
