     Zucchini Angel Hair Pancakes

Ingredients
3 cups shredded zucchini
1 tsp salt, divided
1 package angel hair pasta, broken into 3 pieces
1/2C lower-sodium marinara sauce
1/3C all-purpose flour
1/3C reduced-fat sour cream
1/4C grated parmesan cheese
2 tbs minced shallots
1tbs chopped basil
 
1 tsp fresh oregano
1/2tsp baking powder
1/2 tsp black pepper
2 large eggs, lightly beaten
1 garlic clove, minced
1tbs butter

Instructions
1.Place zucchini in colander, toss with 1/2 tsp salt. Drain for 20 min, tossing occasionally and press between paper towels.
2.Cook pasta according to instructions. 3.Simmer marinara and keep warm.
4.Combine 1/2 tsp salt, flour, and next 9 ingredients in large bowl. Add zucchini and pasta to bowl; toss well.
5. Melt butter in large non stick skillet over medium-high heat. Add zucchini mixture, pressing down.Cook for 5 minutes or until bottom is lightly browned. Flip and repeat. Cut into 8 wedges and serve with marinara sauce.
