Instructions
Heat butter in large saucespan.
Saute onions until tender but not browned.
Add pumpkin, chicken, broth, Beau Monde and Salt and Pepper.
Bring to a boil, then reduce to a simmer.
Cover and allow to simmer for 15 minutes.
Pour 1/3 to 1/2 into blender. Cover and blend till smooth.
(Hold a dish cloth over the top of blender - just in case)
Pour into 2nd saucepan. Repeat w/ remaining soup.
Heat on medium and stir in Half and Half.
Place a pinch of chopped green onions in bowl. Ladle in soup, and
sprinkle a few more onions on top.
