1 Whole Chicken, Cooked and Cut Up (Rotisserie or Home Roasted Chicken is Best)
3 Green Onions Sliced into Small Pieces, Include the Green Portion
1/2 Pound Red Seedless Grapes, or to Taste
1/2 Can Cashews
2 Stalks Celery Cut into Small Pieces, or to Taste
Mayonnaise or Similar Salad Dressing, Enough to Mix Salad Well
Pepper to Taste (May Like Garlic Pepper Mixed with Fresh Ground Pepper)
Salt to Taste (May Not Need If Rotisserie Chicken is Used)
Alfalfa Sprouts (Optional for Garnish)
Instructions
Roast or otherwise cook the chicken if needed. Once done, or if pre-cooked, cut into pieces and put in a large mixing bowl. Add sliced green onion and celery. Add mayo or salad dressing until mix is well moistened.
Add red grapes. Add cashews – it’s best to wait until you’re ready to eat the chicken salad to add cashews so that they don’t get soggy. You can add them in small amounts if you serve the salad in different forms.
Add more mayo, pepper, salt, etc. if necessary. Chill for at least 2 hours before serving.
Garnished with sprouts if desired.

Can be served in a pita pocket, in a half cantaloupe, on lettuce or spinach, etc.
