Cut up, if necessary, and skin chicken pieces. Mix the dry ingredients together. (Using a bread bag for the mix works well or a shallow dish.

Melt some of the butter in a frying pan over medium heat. I usually use a couple of tablespoons at a time because you can always add more. Lightly sauté the chicken pieces, a few at a time, in the butter. You just want to warm them and get some butter on them. Browning is not necessary.

Toss or coat the chicken in the bread crumb and parmesan cheese mix. Arrange the pieces in a baking dish or on a cookie sheet.

|
Bake uncovered at 350 degrees for 45-60 minutes, or until the pieces are browned and the juices run clear.

Replacing butter with olive oil doesn’t really work. Need to use butter to sauté.
