     Mud Hen Bars

1/2 half cup butter at room temp
1 cup white sugar
3 large eggs. divided ( 1whole egg, 2 yolks , 2 egg whites
1Tsp vanilla
1 1/2 cups flour
1 Tsp baking powder
1/4 Tsp salt
1/2 cup semi-sweet chocolate chips
1 cup mini mashmallows
1 cup chopped nuts
1 cup light brown sugar

Preheat oven to 350. grease a 13x 9 pan and set aside.
In the bowl of a stand mixer, beat together the butter and the white sugar till creamy. Then add in the whole egg and 2 egg yolks( save the whites for later),and the vanilla. Mix well.
In a seperate medium bowl whisk together the flour,salt,and baking powder. Now add the dry ingredients to the wet and blend until just combined. Spread this into the greased 9x13 pan. Sprinkle the mashmallows,chocolate chips, and nuts (if used) on top.
Beat egg whites until stiff peaks are formed. Gentle fold in the brown sugar. Then spread this over the top of the nut, chips, and marshmallows. Bake for about 30 to 40 minutes till the bars are a deep golden brown.
Serving Suggestions
let cool completely before thinking about cutting. then cut into squares and serve.
