Wash fish. Salt. Let stand.
Grease a baking dish and the fish with oil. Set aside.

Prepare the sauce. Mash the garlic and salt together. Add the
tahini and mix well with a wisk. Add the water and mix well. Add
lemon juice, continue mixing until thick like gravy. (Add more
water if needed.)
Add chopped parsley. Pour over fish.

Bake at 400 degrees until tender. Move to platter. Garnish with
parsley leaves.

You'll really love this dish. Sometimes I add a layer of thinly sliced green
peppers and onions UNDER the fish for a different twist. Any white fish works,
but my favorite is Talapia. The garnish is my addition. I don't
think mom ever took it out of the baking dish! - Barbara
