In skillet heat oil, add sausage and cook 8-10 minutes. Add mushroom stems and cook 3 mins. Stir in scallions and garlic cook 3 mins. Add panko then swirl in mascarpone cheese (8oz cream cheese, 1/4 cup heavy cream, 2 1/2 tbsp sour cream). Mixture should be creamy. Off heat stir in parmesan, parsley and salt and pepper.
