     Sausage Stuffed Mushrooms

Ingredients
16 large white mushrooms
5 tbsp olive oil
2 1/2 tbsp marsala wine
3/4lb sausage
6 scallions, white and green parts minced
2 garlic cloves minced
2/3 cup panko
5 ounces mascarpone (cream) cheese
1/3 cup parmesan
 
2 1/2 tbsp parsley
salt and pepper

Instructions
Remove stem and chop finely. Put caps in a bowl with 3 tbsp olive oil and marsala.
In skillet heat oil, add sausage and cook 8-10 minutes. Add mushroom stems and cook 3 mins. Stir in scallions and garlic cook 3 mins. Add panko then swirl in mascarpone cheese (8oz cream cheese, 1/4 cup heavy cream, 2 1/2 tbsp sour cream). Mixture should be creamy. Off heat stir in parmesan, parsley and salt and pepper.
Fill caps bake 50 minutes at 325. until brown and crusty.
