     Upside Down Pudding

Ingredients
1 Cup sifted flour
1/2 Cup sugar
2 Tsp baking powder
1/2 Tsp salt
1/2 Cup milk
1 Tsp vanilla
1/2 Cup whipping cream, whipped
Sauce
1 Cup brown sugar, firmly packed
 
1 8oz. can diced or crushed pineappple
1 Cup boiling water
1 Tbsp butter

Instructions
Sift together the flour, sugar, baking powder and salt. Gradually add the milk and flavoring. Blend thoroly. Place in and unoiled eight inch square cake pan.
Sauce- combine sugar and pineapple. Blend thoroly. Spread evenly on pudding batter. Cover with boiling water. Dot with butter. Bake in moderate oven 350 degrees for 30 minutes. Cool. Serve in individual serving dishes. Top with sweetened whipping cream.
