14 bacon strips, cooked and crumbled (or equivalent amount of real bacon bits)
1 cup cheddar cheese, shredded (WIC food)
1 (6oz) jar sliced mushrooms, drained (WIC food)
1 Tbsp dried minced onion (or use a regular onion and finely chop- WIC food)
5 eggs (WIC food)
1 can (5oz) evaporated milk
1/4 tsp cayenne pepper
Instructions
In a greased 9in microwave-safe pie plate, layer the bacon, cheese, mushrooms and onion. In a large bowl, beat the eggs, milk and cayenne pepper, pour over the onion.
Microwave uncovered on high for 4 1/2 minutes, stirring twice. Cook 1-2 minutes longer or until a knife inserted near the center comes out clean. Let stand for 5 minutes or until set. Cut into wedges.
