     Egg and Cheese Breakfast Sandwiches

Ingredients
12 English muffins
12 Large eggs (WIC food)
cheese (WIC food)
Butter or olive oil (optional)
 

Instructions
Lightly oil a muffin tin and crack and egg in each tin. Bake the muffin tin with eggs in a 350 degree oven for 10-15 minutes. Depending on your egg size, start them early to make sure they are cooked through. Try not to overcook them!
Slice all muffins and toast them in the oven for 10 minutes or you can toast them one at a time in the toaster if you prefer.
Add cooked egg, grated cheese, and any meat or veggies you want to add to each sandwich. If eating right away, put in oven or microwave long enough to melt cheese.
You can also put all the sandwiches on a baking sheet and put in freezer. Leave in until frozen, about 1 hr. Then wrap each sanwich individually in plastic or foil and store individual sandwiches in a freezer safe bag. When reheating, you can microwave if you're in a hurry or to keep the muffin crisp, warm in oven at 350 degrees for about 25 minutes. You can even keep it wrapped in the foil you froze it in!
