Brown the pork chops on both sides in the oil.
Remove and add oil if needed.
Combine sherry, oil, soy, sugar and red pepper
flakes
Saute garlic for a minute (golden brown).
Return chops to pan, add sauce and cover tightly.
Simmer fro 30-35 minutes (or until cooked
through). Add water as needed to keep sauce from
reducing too much.
Remove chops to platter. Add cornstarch slurry to
pan and thicken remaining sauce.

Serve on egg noodles. Carrots, green beans, etc. as sides
