     Mongolian Beef

Ingredients
1 lb flank steak (slightly frozen)
1 egg
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
2 TBS cornstarch
2 TBS oil (peanut, preferably)
1/4 cup peanut oil (2 TBS peanut oil reserved)
1 bunch of scallions
 
1 tsp minced fresh ginger
1 tsp minced fresh garlic
2 TBS soy
3 TBS sherry
1 TBS hoisin
3 TBS water

Instructions
Slice flank steak into thin strips. Mix egg, salt, pepper,sugar, cornstarch and peanut oil (1 TBS). Toss steak to coat and set aside, covered, at room temperature. Marinate for 20 minutes. Mince one scallion fine. Mince the garlic and ginger while it marinates. Slice remaining scallions into 2-inch pieces. Mix soy, sherry, hoisin and water. Set aside.
Heat oil in skillet (on high) and add beef and stir fry until golden, brown and delicious. Move beef to edge of pan (or remove) and saute garlic, ginger and scallion (1 minute). add remaining scallions for 1 more minute. then return beef to pan and stir to combine.
Give your sauce a quick stir and then add to pan and stir to coat. Remove and serve immediately.
