     Quick Stir Fried Rice - Congolese Style

Ingredients
1 box of 5 minute rice
1/3 Cup of corn
1/3 Cup of peas
1/3 Cup of green beans
1 small can of Hunt's tomato sauce
1/4 Cup of oil
yellow minced onion
chopped green onion
salt
 
pepper
cooked chicken (left over)

Instructions
Rice - Follow instructions listed on box or however you prefer to cook rice.
Veggies - In a saucepan add corn, peas, green beans bring to a boil. Cook veggie mix for about 10 minutes. Then drain water and set to the side.
Sauce - Heat 1/4 cup of oil in sauce pan, add yellow and green onions, sautee until golden. Then slowly add can of tomato sauce (be careful because sauce sometimes splatters). Add a dash of salt (or to your taste) and black pepper. Lower heat and simmer for 8 to 10 minutes, stir frequently.
When sauce is complete add sauce to cooked rice in a pan. Keep stove on medium low. Stir rice to let sauce distribute evenly. Add cooked chicken, veggie mixture. Turn heat to medium high and stir for a good minute or 2 or as desired. Then remove from heat and voila, yummy meal! Brought to you by Chef Boyard-Zee. Thank you.
