     Spanish Rice

Ingredients
4tb of vegetable oil
1/2 onion, diced
2 cloves of garlic, chopped
1c of uncooked white rice
1.5c water or low sodium chicken broth
1/2 ts ground cumin
1 (10oz) can diced tomatoes or 3tb of concentrated tomatoe paste
1ts of salt (lessen to 3/4 ts if using chicken broth)
1/2 ts of chili pepper or jalapeno spice (optional)
 
1/2c frozen peas and/or carrots (optional)
1/2c fresh cilantro, chopped
NOTE- If increasing the servings, the liquid should only be 1/2c more than the amount of rice

Instructions
Heat 2Tb oil in a deep skillet over medium heat. Saute onions until browned and slightly tender. Add garlic. Set aside in bowl.
Heat 2Tb oil and saute rice until lightly browned. Add onions/garlic.
Stir in water/broth and the rest of the ingredients aside from cilantro. Cover and let simmer for about 30-45 minutes or until rice is cooked and liquid is absorbed. Do not open the lid unless you're sure the the rice is fully cooked.
Stir in cilantro and serve. NOTE- If cooking in rice cooker, must omit some liquid.
