Pare, cook and mash potatoes ( measure out 4 cups ), whip in cream cheese. Add egg, onion, salt and pepper. Bake in greased 1 1/2 qt baking dish with lid for 45 minutes at 350F
Can be made ahead of time and chilled or frozen. Bring to room temp. and bake as directed.
