     Spinach Burritos

Ingredients
1/2 cup onion, chopped (WIC food)
2 garlic cloves, minced
2 tsp butter
1 package frozen, chopped spinach, thawed and squeezed dry (WIC food)
1/8 tsp pepper
6 tortillas, warmed (WIC food)
3/4 cup picante sauce or salsa
2 cups cheddar cheese, shredded (WIC food)
 

Instructions
Preheat oven to 350 degrees. In a skillet, saute onion and garlic in butter. Add spinach and pepper; cook for 2-3 minutes or until heated through.
Place about 3 tablespoonfuls of spinach mixture off center on each tortilla; top with 1 Tbsp picante sauce adn 2 Tbsp cheese. Fold sides and ends over filling and roll up.
Place seam side down in a 13x9x2 baking dish coated with nonstick cooking spray. Top with remaining picante sauce and cheese. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through and cheese is melted.
