Cube Velveeta and Monterrey Jack cheeses. Dice yellow onion. Add to crock pot and simmer, stirring occasionally, until cheese is melted. Add salsa verde, chicken broth and milk. Stir to combine.
If you like your queso a little less thick, continue to add chicken broth and milk in equal parts until desired thickness is reached.
For an extra flavor, try adding some browned ground sausage or beef.
