Dice onion and poblano pepper. Brown beef in a skillet with onion and pepper until cooked. Place a spoonful of enchilada sauce at the bottom of a casserole dish and spread evenly. Quarter the corn tortillas and make one layer on the bottom. Layer half of the beef/onion mixture on top. Top with enchilada sauce and half of the cheese. Add another layer of corn tortillas, beef/onion mixture and enchilada sauce. Top with remaining cheese. Bake at 350 for about 20 minutes, or until cheese is melted and bubbly.
