     Italian Cheesecake

Ingredients
Cheesecake Filling-
3 lb ricotta (put in big pot)
2 cups sugar
10 egg yolks (save egg whites in separate bowl)
2 cups heavy cream
1 teaspoon vanilla
1 lemon rind and juice
5 tablespoons of flour
Graham Cracker Crust-
 
1 1/4 cups Graham Cracker Crumbs
1/4 cup sugar
5 tbsp. margarine, melted

Instructions
Filling- Beat egg whites until stiff. Combine ricotta with sugar, flour, egg yolks and beat until all ingredients are mixed well. Then add heavy cream, vanilla, lemon juice and rind. Fold the ricotta ingredients into the beaten stiff egg whites. Fold mixture well. Then pour all the mixture into the spring pan prepared with crumb crust.
Graham Cracker Crust- Mix ingredients. Using back of large spoon, press crumb mixture firmly on bottom and up sides of pan.
Bake in oven at 350 degrees for 1 hour or until center of cake firm and brown. Let cake cool in oven. Do not remove from oven until oven is cold.
Serving Suggestions
serve with powdered sugar on top
