     Cream of Broccoli Soup

Ingredients
1/2 cup minced onion
1 cup skim milk
1 tbsp margarine
1 tbsp all purpose flour
1 1/2 cups bouillon broth
2 cups chopped broccoli
1/2 tsp tarragon crushed
1/4 tsp garlic powder
1/4 tsp ground thyme
 
black pepper to taste
shredded cheddar cheese

Instructions
Saute onion in the margarine over medium-high heat in a sauce pan until soft, about 3 minutes. Add the flour and cook, stirring constantly, for 1 minute. Gradually add the broth and stir the mixture until it is blended, Add the broccoli, tarragon, garlic powder, thyme and black pepper. Bring mixture to a boil Reduce heat, cover and simmer 15 minutes for 5 minutes. Add a quarter of the soup at time to a blender and blend at a medium speed until the soup is smooth. Return the blended soup to a saucepan and simmer it until its heated through. Serve hot with shredded cheese on top.
