Line a 9 x 5-inch loaf pan with plastic wrap; coat plastic wrap with cooking spray. Place 1-1/4 cups sugar, fruit concentrate, applesauce, and corn syrup in saucepan; bring to a boil. Cook until a thermometer register 224 degrees. Add pectin; bring to a boil. Cook 1 minutes, stirring frequently. Remove from heat. Stir in lemon juice. Pour mixture into prepared pan; cool. Cover; let stand at room temperature overnight.
