     Pumpkin Roll

Ingredients
3 eggs beaten
1 cup sugar
2/3 cup pumpkin
3/4 cup flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
FILLING
8 oz cream cheese
 
1 teaspoon vanilla
2 tablespoons softened margarine
1 cup powdered sugar

Instructions
Mix eggs, sugar, pumpkin, flour, baking soda, salt and cinnamon together and pour into a greased and was papered jelly roll pan. Bake 350 degrees for 15 minutes. Cool cake for 10 minutes then sift powdered on to a tea towel-turn cake on towel and remove wax lapped. Roll cake in towel-then cool. Mix filling together. Unroll cake, spread filling on cake. Roll up and sprinkle with powdered sugar on top.
