6 Large Baking Potatoes, cut into thick slices, chunks or wedges
8 Chicken Pieces with Skin (boneless chicken dries out)
1 Pound Italian Sausage Links, uncooked, each cut in half
1 Large Sweet Onion, sliced into wedges
1 Green Pepper, chopped into large pieces
1 Red Pepper, chopped into large pieces
1 Teaspoon Oregano
1 Teaspoon Dried Thyme
1 Teaspoon Dried Rosemary
1 Teaspoon Garlic Salt
1 Teaspoon Pepper
1 Teaspoon Paprika
1/3 Cup Extra-Virgin Olive Oil
Instructions
Preheat oven to 425. Arrange potatoes on the bottom of a large, greased roasting pan. Place chicken pieces over the potatoes. Arrange the Italian sausages over chicken.
Distribute the rest of the vegetables over top, and sprinkle with seasonings. Drizzle olive oil over all.
Cover tightly with foil for one hour. Remove foil, turn temperature down to 375. Baste with pan juices and add more oil if needed.
Continue baking 30 more minutes uncovered. All ingredients will be roasted and delicious.
