     Cranberry Orange Biscotti, with variations

Ingredients
1/2 cup (1 stick) unsalted butter
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons lemon or orange juice
 
3/4 cup chopped nuts (almonds, walnuts, or hazelnuts)
1/2 cup dried cranberries, chopped
zest from one orange

Instructions
Heat oven to 350 degrees. Cream softened butter with the sugar, beating until pale and fluffy. Add eggs one at a time. Add vanilla and almond extracts, as well as citrus juice. Mix flour, salt, and baking powder together and add gradually to wet ingredients. This is the basic biscotti dough.
Possible additions to basic dough are endless. Fold in chopped cranberries, nuts, and orange zest for orange cranberry biscotti. Another option- fold in 1 cup chopped hazelnuts, with 1/2 teaspoon of cinnamon if you wish. Another options- fold in in 1/2 cup chopped dried cherries and 3/4 cup walnuts. Chill dough for 1/2 hour.
Using a greased cookie sheet, form dough into 2 logs down each side of the pan, lengthwise. The logs should be about 16 inches long and 3 inches wide. The dough will spread. Bake at 350 for 20 to 25 minutes, until the top feels firm. Let cool on pan for 10 minutes, then remove to a wire rack and let cool. Turn oven down to 250 degrees.
Slice each log across in 1/2 inch slices. Place separate slices cut side down on a cookie sheet. Bake for 10 minutes in 250 oven, then turn over each slice and bake 10-15 minutes more. Turn oven off and let cookies cool off in the oven so they will dry out. Decorate cooled cookies with melted chocolate (I like white chocolate for orange-cranberry flavor and dark chocolate for the other flavors)either dipping, spreading. or squiggling (with a plastic bottle filled with melted chocolate)over the top of each cookie. Store in a tightly sealed container with wax paper between cookie layers
