     Ham and Potato Casserole

Ingredients
1 lb. cubed cooked deli ham
4 cups diced potatoes ( I use frozen)
4 T. butter or margarine
4 T. flour
2 cups milk
1/4 lb. Velveeta cheese
salt and pepper to taste
 

Instructions
Melt butter or margarine in microwave-safe dish. When melted, add flour. Stir well, microwave for 1 minute. Add milk and stir well. Cube Velveeta cheese and add to sauce. Microwave for 3 1/2 minute settings until cheese is completely melted and sauce is thick. (May take a total of 10 minutes). Add a little salt and pepper just to season.
Add diced potatoes and cubed ham and pour sauce mixture over and stir well. Bake at 350 degrees for about 1 1/2 to 2 hours or until fork tender. May need to sit for a few minutes before serving.
