     Chicken Pot Pie - Slippery

Category   Entrees - Maindishes
Sub Category   None

Ingredients
2 cups flour
1 tsp salt
1 tsp. baking powder
2 T. shortening
2 eggs beaten
Whole chicken, cut up 3-4 lbs.
1 onion, chopped
2-3 stalks of celery, chopped
4-5 medium potatoes, cubed

salt and pepper to taste
parsley

Instructions
Place chicken in crockpot and cover with water, add chopped onion and celery, salt and pepper to taste. Cook on low 8-10 hours until done. Remove chicken to cool and transfer broth to large pot on stove. At this point you may have to add additional broth to cook potatoes and pot pie noodles.
Sift dry ingredients together, add shortening and mix through flour, add beaten eggs. Add enough cold water to hold dough together, about 3 Tblsp. Divide dough in half and roll out thin on a well-floured board or counter top. Cut into squares. I put dough between wax paper on a plate until ready to drop into broth.
At this point bring chicken broth to a boil. Add potatoes and drop your pot pie dough in a piece at a time. Keep your broth boiling gently while you drop your dough in so they don't stick together. I cook for approximately 30 minutes stirring gently. When potatoes and pot pie noodles are done I add the cut-up chicken and parsley. Keep warm and serve!!
