     Baked Potato Casserole

Ingredients
8 cooked, peeled and diced potatoes
1 pound american cheese sliced in strips
1 cup mayo
1/2 cup chopped onion
salt and pepper to taste
1/2 pound partially fried bacon, chopped
1/4 cup sliced stuffed olives
 

Instructions
Combine first four ingredients. Place in 9 X 13 pan. Top with bacon and olives.
Don't be afraid to improvise. I use less cheese and mayo, no olives and more potatoes in chunks. The taste is great. This is one recipe you can't foul up. Love and luck, Aunt Rita and Missy
