     Pomegranate Pound Cake

Ingredients
3/4 cup sugar
6 tablespoons butter
2 eggs
1 egg white
3/4 cup buttermilk
2 teaspoon vanilla extract
1/4 teaspoon baking soda
2 1/2 cups flour
3/4 cup pomegranate seeds
 
cooking spray

Instructions
Beat sugar and butter until well blended, add one eggs one at a time beating well after each addition. Combine buttermilk, vanilla and baking soda. Add flour to sugar mixture alternately with buttermilk mixture beginning and ending with flour mixture. Fold in pomegranate seeds. Spoon batter into 8X4 inch loaf pan coated with cooking spray.
Bake for one hour or until toothpick comes out clean. Cool in pan 10 minutes,then remove from pan.
