Put 1 pound trimmed button mushrooms into a large saucepan of boiling water and boil 1 minute. Pour into a colander, chill mushrooms under running cold water and drain well. Transfer to a bowl; stir in 1/3 cup bottled vinaigrette dressing, 2 tablespoons chopped parsley and 1/4 teaspoon crushed red pepper. Marinate at least one hour.
