In large skillet, cook beef over medium heat until
no longer pink, drain and set aside. In the same
skillet, sautee' onions, green pepper and garlic
in butter. Stir in flour until blended. Return
beef to the pan. Cook uncovered over medium heat
for 15 minutes, stirring occassionally. Add 1 cup
cheese, tomatoes, milk and Cajun seasoning. Simmer
uncovered 15 minutes, stirring occasionally. Add
fettuccine, mix well. Transfer to greased shallow
3qt baking dish. Top with remaining cheese.
Sprinkle with Parmesan cheese. Bake uncovered 350
for 15 minutes until heated through.
