     Spice Pecan Muffins with Jam

Ingredients
1 2/3 c 70% whole wheat flour
1 tsp baking soda
3 tsp cinnamon
1 tsp ground ginger
1/2 tsp salt
1/2 tsp nutmeg
1/2 c toasted chopped pecans
2 eggs
1/2 c oil (or 1/4 c oil - 1/4 c applesauce)
 
1 tsp vanilla
1 1/3 c apple concentrate
jam of your choice (1/2 tsp per muffin)

Instructions
Combine wet ingredients in 1 bowl, dry in another. Mix together gently only until combined. Preheat oven to 350 degrees.
Line Muffin tin with muffin cups or grease muffin tins. Fill muffin cups ¾ full then drop the ½ tsp of Jam in the middle of each muffin. Bake in center of oven for 25 minutes, then check every few minutes after until set. Allow to cool 15 minutes before devouring - ) Enjoy! (makes about 24 muffins)
