2 (10-ounce) package frozen spinach, thawed and well-drained, squeeze to remove water
6 tablespoons flour
4 extra-large eggs, beaten
1 cup cream
1 cup cottage cheese
1/2 cup Parmesan Cheese, finely shredded
1-1/2 cups Monterey Jack Cheese, cubed
1/3 cup butter cubed
1 cup chopped yellow onions
1-1/2 teaspoons sea salt
1/2 teaspoon fresh cracked black pepper
1 teaspoon ground nutmeg
3/4 cup fine bread crumbs
1/3 cup butter
1/2 cup Parmesan Cheese

Whisk flour and cream. In a large bowl, combine all ingredients. Pour into a greased 3-quart dish.
For topping melt butter add crumbs and cheese. Sprinkle over spinach and bake in a preheated 350 degree oven for 30 - 45 minutes or until bubbly and golden brown. NOTE- Sometimes I top with the Parmesan mixed with 1/2 cup Monterey Jack Cheese which has been shredded.
