1 Cup Mashed Pumpkin (approx 1/8 pumpkin microwaved with a little water until mashable)

1/2 Cup Milk
|
| |
1 Egg
|
| |
100g Melted Butter
|
| |
1 tsp Vanilla Essence
|
| |
2 Cups Flour
|
| |
4 tsp Baking Powder
|
| |
1 tsp Cinnamon
|
| |
1/2 tsp Mixed Spice
|
|
|
| |
1 Cup Brown Sugar
|
| |
1/2-1 Cup Dark Chocolate cut into large chunks!

|

Instructions |
|
|
|
(1) Mix pumpkin, egg, milk, butter and vanilla
together
|
|
|
|
(2) In a separate bowl whisk flour, baking powder,
spices, sugar and chocolate together
|
|
|
|
(3) Carefully mix wet and dry ingredients together
until just combined
|
|
|
|
(4)Bake in greased or lined muffin tins at 200C for
about 15 minutes
|
