20 button mushrooms (cleaned and the stems pulled out and set aside)
1 red pepper
1 green pepper
1 yellow pepper
1/2 cup of italian breadcrumbs
1/2 stick (4 tablespoons) butter or margarine
1 small onion (i use yellow)
salt
pepper
Olive Oil
Instructions
Preheat your oven to 425*. Finely chop your peppers and onion and place into a skillet over medium heat with the butter to sweat. Add a tablespoon of salt and pepper. Chop the stems from the muhrooms and add to pepper mixture.
Add your pepper mixture to the breadcrumbs and mix thourghly. Stuff the mushrooms and place into a baking dish. Drizzle them with olive oil and bake them for about 15-20 min. Serve warm.
