     Layered Cobb Salad

Ingredients
2 oz romaine lettuce, washed and chopped
2 oz iceberg lettuce, washed and chopped
1 avocado, peeled, sliced
1 oz bacon, crispy, chopped
1 hard boiled egg
2 oz tomatoes, diced
1 oz green onion, sliced
1 chicken breast, grilled, sliced
2 oz cheddar cheese, grated, or blue cheese, crumbled
 
DRESSING-
3 T red wine vinegar
1 T dijon mustard
9 T vegetable oil
salt and pepper to taste

Instructions
Once all ingredients are prepared, layer in a pie plate starting with the iceberg on the bottom, then add chicken, tomatoes, romaine, egg, bacon, scallions, avocado and top with the cheese. Add the dressing right before serving.
To make dressing- mix mustard, vinegar, salt and pepper together in bowl. Slowly whisk in the oil. Pour over salad when ready to serve.
