Grate cheese. Preheat an electric griddle at 400° for about one
minute. Spread refried beans on one side of tortilla. Spread a
thin layer of salsa over beans.
Sprinkle cheese on an place second tortilla on top. Place
quesadilla on griddle.
Heat quesadilla until golden brown. Lift edges to look
underneath. Using a turner, turn quesadilla over and cook until
golden brown.
Place on a large cutting board and cut with a pizza cutter.
