     Gran Hartley Parkin

Ingredients
8 oz golden syrup
4oz margarine
4oz brown sugar
4 oz plain flour
1/4 level teaspoon baking soda
8 oz medium oatmeal
1 heaped teaspoon ground ginger
 

Instructions
Melt syrup margarine sugar. Cool and add with 6 tablespoons milk to the sieved flour, soda, oatmeal, and ginger and BEAT well. Pour into 7 inch square tin brush with melted butter and bake in the middle of a moderate oven for 1 to 1 1/4 hours.
This is one of Andrew's Gran's recipes- carefully written in fountain pen on a battered old recipe card. Andrew has tried to make it a couple of times but... suffice to say that Christine now gives him one for his Christmas each year. And it is delicious.
