Heat oil over medium-high heat. Fry tortilla strips. Crisp and drain on paper towels. Add beef and cook to brown. Add remaining ingredients, mix well. Reduce heat to medium; simmer 5 minutes or until vegetables are crisp-tender. Stir in tortilla strips. Serve immediately.
