     Double Crispy Onion Rings

Ingredients
1 LARGE Vidalia Onion
1 cup milk
3 eggs, beaten
1 tablespoon salt
1 tablespoon Splenda
2 cups Bisquick
 

Instructions
Slice the onions crosswise and separate into rings Combine milk, eggs, salt and Splenda into a mixing bowl Soak the onions in the mixture for about 30 minutes. Preheat oven to 350 degrees F Place pancake mix in a shallow bowl Heat oil to 375 degrees F Remove the onion rings from the milk mixture, dip in pancake mix and repeat the process! Place the coated rings in hot oil. Fry rings until golden brown and drain on paper towels During each of the batches, place the rings just fried in the oven on a baking sheet.
