     Front-Porch Fried Catfish

Ingredients
1 c. flour
1 T. salt
2 tsp. pepper
2 tsp. red pepper
2 1/2 c. cornmeal mix
1 T. garlic powder
2 T. thyme
1 c. buttermilk
Peanut oil
 

Instructions
Mix first 7 ingredients. Dredge catfish in flour mix & dip in buttermilk, allowing excess to drip off. Place fillets in cornmeal mix & coat. Pour oil to depth of 1 1/2 inch. Fry fillets till golden (approx. 3 minutes). Drain on paper towels.
