     Beef Stew

Ingredients
3 slices of bacon, cut into small pieces
4 T. flour
1 tsp. salt
1/4 tsp. pepper
2 lbs. lean beef, cut into 1-inch cubes
1 large onions, chopped
1 clove of garlic, minced
1 can (8-oz.) tomato sauce
1/2 can condensed beef broth
 
1 c. good dry burgundy wine
1 bay leaf
pinch of thyme
2 carrots, cut up coursely
2 stalks celery, cut up coursely
2 potatoes, peeled & cut in 4 pieces
6 to 8 fresh mushrooms, sliced

Instructions
cook bacon until crisp in a large, heavy, pot combine flour, salt, & pepper; dip beef in flour mixture to coat completely. brown in bacon fat, turning often. add a little veggie oil if needed. add onion, garlic & brown a little. add tomato sauce, broth, wine, bay leaf, & thyme. cover & cook slowly for about 1 1/2 hours. add carrots, celery, then potatoes,& mushrooms. uncover & cook until meat & veggies are tender.
