     Homemade Meatballs

Category   Entrees - Maindishes
Sub Category   None

Ingredients
2 lbs ground beef
1 cup corn flake crumbs
2 eggs
1/4 c. chopped, fresh parsley (or 1/8 c. dried parsley)
1/3 c. ketchup
1/4 minced onions
2 T. soy sauce
1/4 tsp. garlic powder
1/4 tsp. pepper

Instructions
In a large bowl, combine all ingredients. Blend well and form into small balls, about 3/4 inch diameter. Place in a casserole or baking pan, and heat oven to 300 degrees.
While meatballs are beginning to cook, combine sauce ingredients of choice (see below for some options) in a saucepan. Cook, stirring over medium heat until mixture is blended. Pour hot sauce over meatballs in casserole dish. Bake for about 45 minutes, total. Meatballs can then be transferred to crockpot and kept on low for serving.
Sauce options: Cranberry Sauce 1 can (16 oz) jellied or whole cranberry sauce (I prefer whole) 12 ounce bottle of chili sauce (found next to cocktail sauce or ketchup in store) 1 T. brown sugar 2 tsp. lemon juice Barbecue Sauce 1 c. ketchup 1/2 c. brown sugar 1/4 tsp. minced garlic (optional) 1/4 c. chopped onion (optional) 1 T. liquid smoke
Serving Suggestions
Serve over mashed potatoes or buttered noodles.
