6 oz roasted red bell peppers, cut into thin strips or coarsely chopped
1/2 c chopped red or yellow onion, divided
1/3 c Sweet and Spicy Salsa
4 T diced green chiles
2 oz mozzarella, in 1/4 inch cubes
fresh cilantro
Instructions
Put all but cheese and 1 T onion in bowl and toss. Let stand 15 minutes. Fold in all but 2 T cheese just before serving. Sprinkle with remaining onion, cheese and cilantro if desired.
Or serve as appetizers with corn chips.
