     Lemon Zucchini Loaf

Ingredients
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup canola oil
2/3 cup sugar
1/2 cup buttermilk
1 lemon (juice-2 tbs)
zest of 1 lemon
 
1 cup grated zucchini

Instructions
1. Preheat oven to 350 degrees
2. Blend flour, baking powder and salt..... Beat eggs then add canola oil and sugar, then add buttermilk, lemon juice, and lemon zest..... Blend all ingredients together
3. Pour batter into pan and bake at 350 for 45 minutes
Glaze - 1 cup powdered sugar - Juice of 1 lemon
